Not sure if it is in novels or what. Also Elizabeth was 18 in 1st movie, let's say 20 in 3rd. +10 years makes her 30, not that much to change. Davy Jones carried souls for 10 years and Calypso wasn't waiting for him after his term and that's why he stayed a captain and never did his job. I want to believe Elizabeth and Will stay together afterwards.

The concern is other parties stealing or fighting to re-capture the heart for themselves. The Dutchman is therefore a much safer location than another ship or location on land.

I mean just look at the beach scene at 1:51:15 and what a wealth of information and strategic moves is packed into a short scene. Breaking the few minutes down: • Elizabeth expresses doubt about Will’s cause, believing it to be lost. She understands his desire to save his father but, having seen his condition, doesn’t think he can be rescued in time. Soon, Bootstrap will fully merge with the Dutchman, and as long as Jones remains captain under the EITC’s control, there’s no hope of saving him. • Will, however, insists the cause isn’t lost as long as there’s still one fool willing to fight for it. As he says this, he briefly glances at Jack—implying to Elizabeth that Jack (the “fool” in this scenario) is prepared to stab Jones’ heart and take command of the Dutchman. Elizabeth’s expressions show that she pieces it together. • Beckett, as expected, breaks his deal with Jack, planning to let Jones take him as a prisoner or slave. Jack anticipated this from the start, knowing Beckett’s hatred for him (more on this later). However, this works to Jack’s advantage—he wants to be on the Dutchman to get the chance to stab Jones’ heart. To avoid suspicion, he plays along, feigning reluctance and waiting for Elizabeth to act. • Elizabeth then offers a trade—Jack for Will. This maneuver ensures Jack gets aboard the Dutchman while also keeping Will out of Beckett’s reach, preventing him from being executed if that was Beckett’s intention. • Jack follows Elizabeth’s orders because she’s the Pirate King. He foresaw that for this situation to unfold, the pirates needed to unite and go to war. That’s why he cast his vote for Elizabeth, recognizing she was the only Pirate Lord determined to fight. • Barbossa, on the other hand, doesn’t fully trust Jack. He suspects that if Jack were to become captain of the Dutchman, he might abandon the other pirates if it served his interests. Instead, Barbossa places his trust in his own plan—releasing Calypso, hoping she’ll turn against the EITC. To ensure he can execute this plan, he steals Jack’s Piece of Eight. • Barbossa subtly warns Jack, suggesting that if Jack exposes his plan to release Calypso, he might retaliate by revealing Jack’s intention to stab Jones’ heart. If Beckett and Jones discovered Jack’s goal, they would make sure he never got near the Dutchman, ruining his entire scheme. Jack, ever the opportunist, responds with “First to the finish line then?”—signaling that they should each pursue their plans and see who prevails first. As for the Beckett—Jack Sparrow relationship... There’s a (canon) prequel novel, The Price of Freedom, where Jack works for the EITC under a lower-ranked Beckett. Jack is assigned to transport slaves but refuses, choosing instead to set them free. This decision causes serious trouble for Beckett and hinders his career. There’s also a deleted scene featuring Jack telling Beckett, “People aren’t cargo, mate,” which reinforces this aspect of Jack’s character. Unfortunately, it was cut from the final film, which is a shame, but you can find it on YouTube.
