They are analyzing their own chip / brain and thats why the number combinations ellict a unique emotional response. I got no idea, but with so little information I'm guessing they are monitoring themselves, or each other, and their is significance in "binning" the scary numbers. Almost like catching, and destroying a part of themselves.

When they go to work, they lose the memory of their life outside of work, but they retain the memory of reality, which is interesting. Instead of being work machines that know nothing but their jobs, they also have an awareness of what life could be like outside. For example, when they were gathered in the office, Mark expressed his feelings about Petey and wondered if he got a new job, was dead or alive, or maybe drunk at the beach. This shows that they still have a concept of how life exists outside, but they can never experience it. Inside, they become entirely a separate entity, a whole other life living in the same body—slaves to work.

It’s to make sure the doctor isn’t harming their speech and motor functions as he is cutting around. There’s some really cool (non-graphic) videos of people playing their violin or guitar during surgery if you look them up on YouTube.
