It's a nice suggestion but I'm not sure if GEKs as a whole will enjoy a fully slice of life show. We can see some seem slightly tired while watching Haikyu. I remember Cannon saying he doesn't like it before starting Haikyu. They can take the slice of life parts in Haikyu because there's the thrilling parts of this show. The slice of life sections/episodes provide a respite from the high adrenaline episodes in that show. It gives a nice balance.

Gotta admit, even for me on my first watch I found them a bit unnecessary but on the rewatch now I understand how important all of it is for the story. She has very little confidence in herself, possibly due to her family relationships or her innate personality, and she had been repressing her feelings and giving up in the past.
