Banter aside, I think the reasons Jinbe didn't get involved with Hordy were 1. Luffy said he wanted to take down Hordy and jinbe the honourable man, he is letting him do it without interference. 2. Jinbe's plan involved Luffy and the Straw Hats being the heroes to convince the people of Fishman Island that humans can be trusted.so I think Jinbe wanted to stay back a little bit and let them do it. In saying that, I agree it would have been nice to see Jinbe swim with Luffy to fight Hordy as a cool character moment.
