35:15 She's using the right knife, but her technique is garbage. For raw protein dishes like Tataki, Sashimi, and sushi you need a knife that's thin, long, short in height, and light in weight. It looks like she has a Sujihiki, or a western style Yanagi knife. The problem is her sawing motion, which make the slices look like a ruffles potato chip. The slice has to be made in one motion, so it isn't too thick or thin in random spots. Plus pulling the knife towards you puts less pressure on the knife, rather than trying to crush the meat and produce holes in the muscle moving forward. Plus, why doesn't she have her head above the meat so she can see the spine of her knife running parallel to the protein? That's the to tell if you're screwing up the portion size.

Salami is delicious when fried and tossed in a salad. 8:47 You can roast peppers on the gas range like they did, cut the peppers in half and use a salamander, or in the oven. Then, put them in a stainless-steel bowl, covering the top with plastic wrap. This traps the steam coming from the peppers, and it moistens the charred skin. 10-15 minutes later and the skin should be loose enough to scrape with the back of a chef's knife. But the burnt flavor will be apparent even if a tiny bit of charred skin makes it into the final product. Bitter flavor notes especially can be perceived with only trace amounts.

Yeah my sister and I were talking about this. She tends to skip most of the show (when theres drama) and enjoys the cooking sections or main competition part, but that's it.
We grew up kind of watching shows like Chopped and Iron Chef and while I remember it being dramatic (I remember like the music, dramatic zooms, and so forth), I don't really remember much drama with those shows so that's probably why we prefer the cooking parts more lol.

Salami. I understand the bad editing for drama, but it still makes me want to see what really happened. I'm interested in the chefs and their work, not the fake drama. I will say, if they were basing on teamwork (needed for any kitchen) and leadership (ditto), Sarah would have been out long ago, in my opinion. Sigh. I prefer Heather. I really liked Rachel. Both of those women are/were less catty and more work/ goal oriented.

again, Alicia, I feel like you're thinking that too much is done behind the cameras during these kinds of shows. I do agree that they do think about stuff to happen, but I just don't think that the show runners are going to deny the contestants or Gordon to make their own choices or decisions based on how the views or how public reaction to their attitudes are. I feel like you're giving show runners too much credit for how they run things in competition shows like this. it's still all completely great, your reactions and the show, don't get me wrong, but I still feel like the choices that happen are still at least 95 percent because of the contestants and Gordon's choices, not the show runners.
