I would say you can like any coffee you want to - I just wish they would standardize on these things; I tend to order a cortado rather than a flat white, because far too many places just use basic steamed milk for both, and a higher ratio of milk for the flat white. A *good* flat white though uses much hotter milk which gives it a distinct texture and the same 1:1 ratio as the cortado It is possible I have strong opinions about this :D

Plate is a bad choice for thermal damage. Too conductive of heat and too dense. You want a non-meltable insulating material (aerogel/silicone sandwich works well) with a reflective coating.
