The movie The Holy Kingdom involves Jaldabaoth considerably and explains why Demiurge hasn't appeared much in this season. Ains has the Mirror of Remote Viewing, we've seen him using it to check the lizard village during their conflict, he's been using it to watch Jircniv to see how a king should act. A flaw in the Mirror is it generates a sense of being watched in the person being viewed soJirniv's paranoia is partially based on this sense of unease he has. Yes, it seems players got snatched from the game but appeared in the New World roughly every 200 years, and one group founded the Slane Theocracy, and others were known to the dragon.

She only cares about Momonga which was the name she was in love with but hates the guild name Ainz. Writer never explained the series further so we still don't know the main reason she hates the guild. Most obvious answer would be that they left them or maybe she knows something which Momonga don't know.
