Sadly Anime skips a lot, especially Ainz (and human self Satoru) thoughts and their strategy/discussion. It make it seem like Ainz is only going with his subordinates plan but that's not the path he choose. If Ainz is a king, Demi is just his minister/counsellor similar to human kings. Anime don't even explain how skills and power works in Overlord making it clear that their aim is to get more light novel readers if you want to know more. But why Ainz is taking all of this so lightly and allowing Demi to act on his own? Ainz only goal is to make him and his NPC stronger to survive, while gathering information from the new world before any other top guild of human players is summoned to this world. Ainz now know that more players/guilds are summoned to this world from the game after some time. Few of the 13 hereos were probably players and people having world items and equipment from the game here in new world confirms it. We too know that Platinum Dragon knows a lot about guild and it's weapons probably because of players. There is also possibility of encoutering(summoning) boss enemy of world level from his game, which are mostly powerful dragons. World enemies are so powerful that more than one guild used to fight them. Even Nazzarick alone will not be able to defeat them so they need to gain new information, new powers and new subordinates who can increase their level under Ainz. But it's not wrong to say that Ainz human self(Satoru) is actually facing crisis in life due to past and present situation. The monotonous tone in which he talks in his head as human confirms that he is detached and not enjoying life, he accept his newborn undead side(Ainz) for the sake of his subordinates who revere him as supreme being. Because of that he is afraid of showing his human side to others, so he behave more and more like this new persona "Ainz"(undead overlord) and not like Suzuki(human side) or Momonga(online player personality) from previous world. He is detached from the world and so is Ainz right now, but he is in no way a sadist, right now he is more close to a psychopath on human level but as an undead master of non-humans he is perfectly normal.
