They had magic, and they had dragons. The doom of Valyria refers to the destruction of the whole freehold by a massive volcanic eruption - or by their own magic gone wrong(?) - the history is a bit blurry - of course this happened many, many centuries ago. The Targaryens survived because they had moved to the island of Dragonstone (the location where we first met Stannis) before the doom happened. Dragonstone is where Aegon the Conqueror and his sister-wives - and their three huge dragons - launched the conquest of the Seven Kingdoms of Westeros, first landing in the place we now know as King's Landing. BTW, all of these stuff, and much, much more, is very nicely explained in The Histories and Lore videos that we recommended a while back. There is one for each season, so there are no risk of spoilers.
