On your sugar baby dates, you have two perspectives to do the date on, one from sugar baby, and one from sugar daddy/mommy. Your main goal is to either give or receive money.
There will also be some hidden interactions.

I'm thinking of how Basemental Drugs gives celeb sims a negative buff for being seen outside their home "dazed" aka high. Maybe being on a Sugar Date affects your rep if you're seen giving some sugar 👀
