Below, I've picked out some arctic/aquatic monsters from the 5e monster manual as well as Kobold Press' books. Pick the one you like best. The top pick gets an adventure made for it.
- Akhluts—Part killer whale and part wolf (CR 6).
- Birgemon Seal—Seal creatures whose backs open up like the Thing. Pretty gnarly (CR 2).
- Glacial Crawler—Like a big, pink tapeworm that lives in deep, cold waters (CR 11).
- Hag, Floe—Floe hags are found in freezing cold seas (CR 5).
- Hvalfiskr—Part giant, part whale (CR 15).
- Iceworm—Tube-like warms drawn to warmth (CR 1).
- Imperator—Huge penguin monster that travels with swarms of penguins (CR 11).
- Krake-Spawn—Part spider, part squid, part demon. Super gross. (CR 9).
- Lindwurm—Crocodiles with long bodies that live in cold waters (CR 5).
- Pal-Rai-Yuk—Strange, three-segmented dragon things with dorsal fins and six legs (CR 8)
- Ravenfolk—Avian race of scoundrels and schemers cursed by Odin (CR varies)
- Runeswarm—Runes that have gained sentience and now attack things (CR 10).
- Shimmer Seal—Nearly transparent tusked seals (CR 5).
- Vikings—Other Vikings, that is, that aren't you. Will make new stat blocks for them. (CR varies).

Quite a few good choices on here I’d love to see. Lindworm, hvalfiskr, akhluts, but my top pick is Pal-Rai-Yuk, mythical creature of Innuit folklore.
