I think the reason they decided to focus on Huntress Wizard is because she acts as a Great Foil to Fionna. Fionna wanted to go on endless adventures, discovering new things and improving herself on the physical sense.... but by the end of her adventure on season 1... she decided to settle down and live a "normal life" alongside his peers. And then you have Huntress Wizard who decided very early in life that she was never gonna settle down, always on the move and always pursuing adventure and above all... strength. Because.... just like she said back in "Flute Spell"... she believes that if she settles down and pursues the things other people do... like love.... she'll become soft and complacent, and that she'll cease to be the person she is... or rather the person she wants to be. But also.... the strongest reason they decided to focus on HW this season is most likely because they realized that she had very little screentime and development in the original series, which is not ideal when we're talking about the Girl who is supposed to be the soulmate of our protagonist Finn (besides Jake of course).
