It's not really changed , it's the same for the anime, it's just less elaborated upon, don't have time for everything, even when having almost 30min episodes. However there are quite a few scenes that have been skipped for the anime as a whole and a few of them have quite important plot points. Again those plot points are probably still true for the anime, they just weren't shown in it. But then again those plot points would have just confused the watchers even more, since a lot of them end up relating to stuff 2-3 seasons down the line, that is if we're getting more seasons

He didn't literally burn down Rem and Ram's village, it was the witch's cult, however he knew it would happen since the gospel mentioned it, but didn't do anything to stop it, since he only cared about Ram since she is probably important for the future described in the gospel. So it's more of an indirect thing.
