I believe that Rick got angry at seeing Carl about to eat dog food because he just doesn't want to see his family have to settle for something like that, which is then why he's so happy about and so persistent on securing the prison as much as possible.

Daryl saying "little Shane" was about the baby in Lorries belly eating all the food as she has to eat more than the rest for the baby. Also Rick being cold towards Lorrie was because of the Shane situation but also how she reacted at the end of season 2 when he told her he killed him.
