Who's to say that the dead can't have devil fruits? It's true that once you die after having consumed a Devil Fruit (with the exception of Brook's) that its power transfers into another fruit, ready to be consumed again. However, if a Devil Fruit can be "consumed" by a non-living thing like a gun or a sword then I'm sure that there's a way for its power to be made manifest in a reanimated corpse.
