Hollows aren't necessarily hollows cuz they did bad things. Hollows are a part of nature as well. Soul Reapers have taken it upon themselves to purify them by killing them but this espada questioned why is it wrong for them to eat humans. As in, if humans are allowed to eat whatever like lambs, cows, we eat humans cuz they are "our" food. Why do you judge us for that?

Turning into a Hollow has nothing to od with doing bad things in life - those end up in Hell. Turning into a Hollow is somewhat a natural occurence, if Shinigami will not send you quickly enough to Soul Society, as your own regrets will eat you away. As for the hole - normal Hollows have their hole in the place of their heart, but Arancars can have it in different places on their bodies - Ulquiorra have it above his chest, Nnoitora have it in his head, and Nelliel... strangely, does not have a hole.
