For 1.16.5 its same as always, lots of bug fixing and polishing, ability protections in particular got a lot of love, fixing couple of issues and making them slightly faster and more customizable, but more "traditional" bugs for abilities got fixed too. Release near the end of this month. Besides some missing textures for the new bosses and the flying fish mob (which will be done this upcoming week) I'd say this build is a good release candidate, there are atm no known bugs (of course you're more than welcome to change my mind here) and most of the features that Ive wanted got implemented. So if you were waiting for a stable version, this is probably your best bet.

For 1.20.1 its a bit dry sadly, due to most of the effort going towards fixing 1.16.5 before release, however even if no major breakthroughs were made more fruits got ported and more systems were updated or ported so overall progress has been made. Overall progress is at about 40% now after fruits started being ported (I'd guess maybe like 1/3 of them?).
