Loved your reaction. Return of the Jedi has always been my favorite. I can vividly remember sitting in the movie theater summer of 1983 and being terrified cause I thought the emperor was going to kill Luke
It's already been said, you should watch the TV live action and animated shows before watching Episode VII. Especially The Mandalorian since it starts 5 years after Return of the Jedi and shows you how the galaxy is dealing with no Empire.

The good thing about entertainment, is that it's all subjective.
For example, I remember SW fans hating the prequels when they came out, but Stef seemed to like them.

The other star wars flim ruin it , its more woke . George Lucas even mentioned that the force awaken another was just another of his first star wars movie Hope but 2.0. They didn't use his script for the following movies but went there own way and that why alot of stars wars fans don't like it . The last jedi and rise of Skywalker don't do justice to the Skywalker name . You should watch the Ahsoka series is good . But you should start with he series of The Mandalorian it kinda take place kinda like 10 to 20 years after the return of the jedi. The next film, as you mentioned, is The Force Awakens, followed by The Last Jedi, and The Rise of Skywalker. These are the furthest in Chronology for films & shows.
Since you seem to be enjoying these, there is plenty of Star Wars content that is more in-between things and not 100% focused on the Skywalker saga:
- The Andor series is set a bit before Ep4.
- The Mandalorian is set after Ep6.
- The Book of Boba Fett is set after Ep6 as well. Boba Fett is the bounty hunter that kept looking familiar to you in this movie.
- The Ahsoka series is also set after Ep6, but I recommend watching the Clone Wars Movie + Series, and Rebels Series first.
