β Ingredients
Marinade:
1 tsp salt
1/2 cup rice flour
1/2 cup potato starch/corn starch
2/3 cup water, more if needed to make a glue consistency
1.5 lbs chicken wings
Sauce:
1 lemon, zested and juiced
3 tbsp butter
A bit of oil
Minced garlic
1 tsp honey
Salt to taste
Black pepper to taste
2 tsp garlic powder
Frying oil
In a bowl, combine all the marinade ingredients and mix until it has the consistency of wet glue.
Put in the chicken wings, mix until evenly coated, and let sit for at least 1 hr (or in the fridge overnight) for best results.
When chicken is ready to fry, heat up frying oil in a pan no more than 1/2 full on medium heat.
When oil is hot (small bubbles forming around a wooden chopstick when put inside the oil), drop in chicken wings 2 or 3 at a time.
Make sure chicken has a nice thin but even layer of coating around it before putting it in oil.
Fry a few minutes each side until cooked through and golden brown (can double fry if you like).
Set aside on a drip tray while assembling the sauce.
In a nonstick pan, melt butter and a small amount of oil on low heat.
Once butter is melted, add in garlic and fry slowly until slightly golden.
Add in the rest of the ingredients, stir quickly, and turn heat off.
Add in chicken to sauce and toss well.
Serve while hot!
