In actuality, when it was originally referenced in the manga, Katakuri's powers were described as a logia. Somebody pointed out to Oda that logias can only be naturally occurring elements and so mochi wouldn't fit. Oda then called it a special paramecia. The line calling Katakuri's powers a logia were then edited in the volume releases of that chapter.
