Some people see it as him imitating Shanks, while there definitely is a parallel there, I think that he sees it a little differently. To Luffy, they are so far below him that they're not worth fighting. Luffy is aiming for Pirate King, the very top of the pirate world! To fight them seriously now over their remarks would be conceding that these dreamless idiots are worth even one single punch from him.
