End of Season 2 left off in Chapter 82. There are 48 chapters left soooo Season 3 is the LAST season of Kaiju No.8 possibly. They've adapted 44 Chapters of the manga in Season 2 in just 11 episodes. Meanwhile Season 1 was 38 chapters in 12 episodes. So possibly Season 3 might be just adapting it in 12-13 episodes. But 44 Chapters in 11 episodes is quite a fast paced adaptation from Season 2. Maybe that's why it kinda feels off than Season 1 did because Season 1 was the right paced for a manga to be adapted into an anime. That's the average pace of an anime show manga.
