The reason why the Ice King is so obsessed with princesses is because Betty was known as his "Princess". And Ice King's fascination with Princess Bubblegum specifically is due to PB and Betty both being very smart which shows that Simon's characteristics are still a part of the Ice King in some way even if he's not himself. Which I love details like this if you pay very close attention, because they definitely didn't need to explain why the Ice King behaves the way he does but I'm glad they showed us why. Also if you remember during the VHS tape episode that Simon said that Betty ran away from him as soon as he put on the crown, but she technically never ran away from him and just made a time loop by traveling into the future to save his future self which is another detail that I love.
