Also just some notes about some of the songs: A reason the Haikyuu and Mha osts could sound similar to you is because they're made by the same composer so his sound is pretty recognizable (I'm also waiting for the day you react to Haikyuu my #1 Sports anime). The Celeste song is from a harder version of a level in the main story. All Celeste songs labeled with "B-Side" are more difficult versions of the main levels. Celeste even has "C-Sides" which are even MORE difficult versions of the level but they have the same music as the B-Side. I'd also love to see you play OMORI some day. That game got me in my feels and other emotions like crazy. One of my favourite Rpgs in recent times for sure with a banger of a soundtrack.

Honestly, I don't have a real definitive way I find music. I know about these songs because I have like 4 artists I ride or die for and I listen to their stuff on repeat, so when they drop new stuff I'm there immediately. It's not like I don't listen to other artists or don't like their music, but for me personally, I have to have a strong connection with the artists I listen to before I add them to my playlists (Its kinda like how you said if its playing in the car you'll vibe with it. I'm similar like that where I'll vibe with it but I'm super picky on what I'll listen to in my free time). That's why all my playlists are filled with the same like 4 artists lmao (If you look back, Ericdoa and Aries were on my previous song requests). Also, I requested an Aries song in my previous song request called "Sayonara" which is probably why you recognize him. I also pretty rarely put my Spotify on autoplay to see what pops up and potentially add songs and artists to my playlists. That's also how I discovered that Braden Ross song among his other music.
