The Return of Garum

I’m so thrilled with how well the Garum video has been received. I worried people would be sick of Garum, but it seems they are not. Thank you all for being so supportive through the process of making it.

Also, I’m starting to plan out videos for 2024. are there any stories, topics, or dishes you want to see?

I would absolutely love to see more on Titanic, that was my favourite series. Also coming from the Uk I would love to know the history behind our popular pie and mash.

You are too sweet. I have yet to have a response bad enough to warrant and epipen (I've used benadryl) but I do have 3 epipens in the house. What I need to get batter about is carrying it with me. Oddly enough, I found out from an allergist that I had the allergy before I ever had a reaction. I'd seen one for something else and he said I had an egg white allergy; I told him balderdash but a year later, I had a reaction.

I was just looking at an episode on first class Breakfast from several months ago. These comments are the only comments I have access to right now. And I noted your comment about egg white allergies. I’m concerned! ( I’m allergic to all dairy and egg products!) That’s why I have previously asked you about dairy free/egg free foods recipes from the last perhaps? .(Maybe now you could explore using allergy subs either some newer products to make some of the old recipes available to folks with allergies?) I can explain in a separate desperate discussion. What is more important is that I hope you have seen an allergist by now? Have you had complete allergy testing? The fact you said your mouth swelled up with eating egg whites is very dangerous! At least do you have Benadryl and maybe an epi pen close by? Please advise me! You appear to be very susceptible to severe allergic anaphylactic response! ( Can be deadly!) it’s not a joke! You need to know exactly what you can and can’t have. The fact that it is making an appearance in you as an adult is very serious! Cross-contamination is very serious also! I realize I’m rambling but it you reply and say yes I have been tested and I have Benadryl and an epi pen etc then I won’t say another word…please alleviate my concerns. Thanks

I don’t know if it’s true but I heard tomatoes was introduced to polish cuisine when a polish prince married an Italian princess and the Italian princess brought tomatoes over. If it’s true, I Would be interested to hear more on how certain cuisines are changed because of introduction of certain fruits or vegetables.

I would love to learn the history of Pho and how to make it. Where was it developed, how did we get it in the U.S., is it different here than in Vietnam, are there any rules or rituals to be followed when cooking or eating pho?

Would love some history on ancient Persian foods, would be neat to see the evolution of Sephardic and Ashkenazi cuisines, and a the old German traditional foods of the Amish and Menonnites. Th ere is a great resurgance in Native American cuisine - maybe partner with one of their chefs/traditional food specialists? So many options there - from South and Latin American (I know you've touched on some already) and Mexican - but also ao many North American tribes from Alaska to Massachusetts to Arizona. I'm totally crazy over the ancient world recipes as well as the medieval and rennaisance recipes too!

How about diving into some African cuisine? There's also numerous kingdoms throughout history that are incredibly fascinating. E.g. the Ashanti or the Ethiopians and their fascinating language.

Hey Max, just wondering if you're interested in checking out Spek n dicken. It's a German New Year's pancake. I have the recipe and continued my mother-in-law's tradition of making them after she passed like 27 years ago. I do not know the origin of the tradition. Her family was from northern Germany.

I would love to see some Native American cuisine as it is hard to come by. I feel this would give a stronger backing to the US's own natural resources we have here.

I'd like to see an episode on the luxury, private trains that crossed the country. The rail barons feasted in style and I think it would fun if you could get a tour of one of the refurbished cars that a few places have on display. Or even go out on one of the special expeditions that go out with the steam engines.
