I think for the moulin rouge thing, it was maybe like months or like a year before Lucy joined fairy tail because the outfit she’s wearing is the one she wears at the start of the show. But she’s like 17 at the start so I don’t think it’s that long before she joins or else she would’ve been a kid or something in that scene lol

To answer your question about Mavis. After the last arc you get a 10 episode arc called Fairy Tail Zero that follows Mavis and the creation of the Guild. So your wish will be granted soon. It's an awesome arc.
