I caught one link like that last night and didn't realize there were more, those are fixed now with the actual link pasted into the post so it can be copied if the hyperlink formatting doesn't work. It seems when I went into the post to edit it, the link was still there, just not working in the post anymore. I'm going to have to write Tumblr support about this strange issue. Thank you again!
