Been messing more with the Steinway VST. I think I made it sound brighter and also similar to my current VST but with more depth. Have a listen (attached below). First audio is Steinway, Second repeat is Yamaha. I'm kinda picky with certain parts of sound, particularly with having a strong piano ATTACK but also with a long sustain and also THICC at the same time. The Steinway seems to be what I'm looking for, with the right settings.
In real life though, Steinways are very hard to get the sound with what I'm looking for. I think I'll stick with Yamahas on a real stage.
Also, I've decided to arrange Lemon, by Yonezu Kenshi next. Almost done with the arrangement, probably a couple more days of practice needed.
