Should I release a demo now revealing the premise of the story without quests?
- Current previews, no interactions, no story missions, etc.
Or wait until the game play and story are more presentable?
- More story, animations, interactions, sound, etc.

Exhibition gameplay is enhanced by context. So npc interactions and reactions would make for a funner experience. But if you need gameplay feedback, by all means release something that you'd like to hear player response to.
