I have a visceral attraction to sausages. There are many reasons why I love them. They all look similar but can taste wildly different, they sweat when they cook, they snap when you bite into them, every culture on Earth has sausages & everyone loves them. Something about the iconic representation of the sausage got to me at a young age. I remember back to the first time I read the comic of or saw the cartoon of the Egg & the Smurfs, where Hefty Smurf is turned into a sausage. (The Smurfs are another huge influence.) Like chickens & pickles, sausages are just instantly funny & charismatic to me. There is something about being able to transform lesser cuts of meat into something so much better than just bad cuts of meat. I started to think of America as a sausage, as a hot dog really. Where all sorts of cuts of meat from all over come together, are blended up, spiced, salted, stuffed & smoked. The blending with spices, salt & smoking elements are all just as important as the coming together. These are steps that can’t be stepped over. The result is something so vastly improved but it has to go through the steps to be transformed. This transformation is integral to the improvement of all things on this Earth. You can’t always get the best, but you can almost always transform things that are lesser into something greater with just a few steps. In an ideal world all the ingredients would be top notch, but we don’t & have never lived in an ideal world. I don’t eat too much pork or beef anymore & I watch my sodium intake so these days I only eat chicken sausages occasionally, but all sausages look great to me.
