Dragons doing something other than blowing things up reminded me of a book I read recently - Burn by Patrick Ness. There was a dragon, Kazimir " being paid to clear a farmer's field so it was ready for planting a crop.

As for dragons doing work.... not exactly what you're looking for but Robin Hobb's later elderlings books have some of my favorite intelligent dragons I've ever read. They don't exactly strap on a hard hat or anything but... they give reluctant help and transportation multiple times and it often times is some of my favorite unintended comedy in the whole series
