Early Look: Cantonese Fried Chicken Wings

Daipaidong-style fried chicken wings are quickly becoming a modern classic in Guangdong. As eating establishments that specialize is serving up, well, whatever food's tasty and comforting... over the last few decades fried chicken wings have quickly began to spread through Daipaidong menus.

As a newer sort of thing though, the chicken doesn't really have any clear 'standard' between restaurants. So for this video, we decided to go over two sorts of fried chicken - one mimicking a daipaidong that we love in Shunde, and based off of a fermented tofu-based marinade.

Haha, we've been wanting to do it, but as much as there're "shape rules", there're also so many exceptions, so it's quite hard to conceptualize this video, but we're still thinking about how to best communicate the ideas.

Could you please please please do a video or a blog post or a segment or w/e explaining the shape rule? You tease it a bit in the Mapo video but you say there are lots of exceptions but don't say much more about them and I can't find much in the way of English-language text on the subject. I had the pleasure of eating "general tso's pork stir fry" in the college cafeteria today—slices of bell pepper and onions, tiny broccoli sprigs, peas, and cubes of pork with a sweet sauce (probably based on hoisin?) and even though I was using a fork I could tell something was off, and I'm sure that was a big part
