This soup is a great way to enjoy a comfort food like pierogies, while practicing balanced nutrition and portions.
And if you don't know what pierogies are, you're in for a treat! They are basically stuffed dumplings, usually filled with a mixture of potatoes and sometimes cheese. But there are all sorts of fillings out there.
As with all soups, this recipe is very easy to alter to fit your personal preference.
