A while back, I did another sheet pan recipe using a different flavor chicken sausage, and everybody really seemed to enjoy it. Not just because of the taste, but because of how easy these types of recipes are.
I saw this Chipotle & Monterey Jack Cheese Chicken Sausage and thought sounded really tasty. I did get them from Walmart, so I'm hoping they are easy to find for most.
With that being said, I know some of you may not be able to find them, or just might not want to use them. If that is the case, be sure to check the last page of the PDF for an easy swap to regular chopped chicken.
Also, before you try this recipe, beware that it's a little tangy from the use of the lemon and lime juice. If that concerns you you can use half of the recommended amount and add more after the cooking process if you want to. But I think the mix of heat from the chipotle and the acidity of the lemon and lime juice go well.
And just like all of the other sheet pan recipes, the vegetables are very interchangeable. So if you want to swap the zucchini and squash out for something else, feel free.

I will also be posting the Oven Roasted Parmesan Broccoli soon, so that can be a nice side dish to accompany the chicken strips! I hope everybody is ready for that.
