My personal theory is coming from the fact that they don't know anything about themselves as knights except that they're born from tears of despair, only finding out later they disappear with tears of happiness. So going off of that, one thing Jinyoung might not realize is that once they've done their job as a knight, proving loyalty to the person they are meant to protect(including sacrificing themselves), that they are gifted with returning as human. Same thing as betraying your person, you are relieved of your duty as a knight and become human, but along that comes with the guilt and regret.
