"Cajun" Chicken and Rice

To everyone enduring hardship right now, my thoughts are with you and I can empathize. Thank you for supporting Cooking Comically and thank you just for reading and cooking with me. My greatest hope is that this silly thing that I do might bring you even the tiniest amount of respite.
I was craving some chicken and rice dishes really hard this month and this one stood out to be easy, easy to mod, and delicious. So here we are.
