It sounds like you've already given a lot of thought to the platforms. YouTube is really time-consuming, especially video editing. So, it would make sense for me to do YouTube more as a hobby. Perhaps you could also combine it with Twitch. Since Twitch eventually stops saving older streams (they're deleted after 90 days, and highlights are only partially saved), it might be a good idea to save your streams there. You can also generate content from Twitch highlights.
