Okay, so, first off...insane to ask someone to watch Endless Waltz who has not watched Gundam Wing. Just wild choice. Having covered that...yeah, welcome to the Gundam Wing experience. It's a mess with a good heart that alternates between stuff that works and TONS of stuff that just does not constantly. So...uhhhhh...grain of salt if you decide to watch the series. It aged....complicatedly. That being said, I do like Heero's final act as a pilot being to be okay actually killing folks (he absolutely does kill multiple pilots on at least that first shot) regardless of how many he actually kills but then to fake killing the kid who was raised as a weapon so that she could start over, a chance he never got as someone raised as a weapon. Sure, the movie is such a mess that even having seen the show multiple times it still barely works but fuck it, I liked it for what it was.

Regarding the: "How many other Gundam shows are there?" Gundam shows come in two flavours usually; you get the Universal Century (UC) timeline which is the OG and has had tonnes of shows happening there; and the 'one shots' which usually are just a couple of seasons and are self contained political commentaries. UC is very much a cultural juggernaut in Japan and generally touches upon the horrors of war, the concept of transhumanism, and 'every side thinks they're right'. Wing was a commentary on the military industrial complex, the different views of pacifism, and the glorification of soldiers as heroes. For a 'best' Gundam show I usually recommend SEED or 00 as they have no entry requirements and at least the first two series were great (haven't seen the movies). Iron Blooded Orphans is also really good but given Clarus' reaction to Marimeia, child soldiers might be a rough sell.
