Like you already suspected, they did find out very late in the game that the show would not be renewed. That is is why they went ahead with the Iliria plotline, and had to scramble to get to the end of the show, cause they had hoped that they could flesh the stories out over season 6 but then found out they wouldn't be able to. Rumor has it that the show was canceled cause Joss basically said "either renew the show now or don't" (he wanted to know where to go with the stuff he had planned) and it backfired cause the show got canceled instead. I am sad about the fact that it was underwhelming for you, though not entirely surprised lmao. I hope you still had a good experience overall, and I will miss your reactions! All the best to you

Whereas Buffy's ending shot was showing the realization of her own growth and leaving her open to the future, this one was only slightly ambiguous because that was the point - fighting the fight despite the odds was the theme of his show. So they were both perfectly fitting imho. Great reaction!!
