You know; if you go back and look at the episode where Aang first tried to learn how to Firebending; you can see exactly how on point Jeong-Jeong really was when trying to teach Aang. Almost everything he said back then was retaught here; the heat of the sun, the energy of the body and breath, fire being alive, control over the flames, being centered with your emotions; all of it. Really there's only 2 real differences. The first is that; as was pointed out then, Aang just wasn't ready to learn Firebending yet. He didn't have the mindset or the experience the same way he does now. The other was Jeong-Jeong himself, and the one aspect of this episode that he didn't know. This ep talks about how fire is a living thing that can bring either life or destruction, whereas Jeong-Jeong believed that fire was a living this that could *only* bring destruction. And considering he grew up in the modern Fire Nation; you can't really blame him for that distorted view, but really he was second only to Iroh in terms of truly understanding Fire Bending, which is cool. Jeong-Jeongs a pretty underrated character imo~
