Facts about Unlock: In this dystopic, vampire universe, Humans were able to subdue Vampires. Now, the only way a Vampire can survive is through a contract with a wealthy Human.
Among Humans that made such a contract, it's customary that they shouldn't feed their Vampires directly. Blood draws are much preferred and way more proper. Biting is seen as a fetish and strongly implies a sexual relationship with the Vampire... which is considered a deviant thing.
Ermes never had a Vampire and has to learn the etiquette still, that's why he awkwardly offers his wrist on his very first time with Dario.

Aside from that, owning a vampire is pretty much a status symbol in this universe, of your own power and more generally of human kind's power. Though some humans suck and get vampires as mere pets or sexual objects... but it's mostly consensual.
