I like your interpretation but I think the main reason this episode is called the children is because you see the children of the forest for the first time. They are mentioned in other episodes especially in season 1 where Bran and Rickon are getting told various children's stories.

Long note but I realized this is one of my favorite season finales.
GOT is so detail heavy - I'm nearly positive I've seen at least the first 4 or 5 seasons more than once and yet there's still so much that I don't remember in detail so this can feel like a first time watch sometimes.
Like I remembered the whole battle at the wall last episode and I generally remembered that it was Stannis that swooped in to secure the win (it was so fun watching you try to figure that out lol) but this whole plot of Jon leaving by himself to go kill Mance made me go "did I miss this the first time around???"
Lol I like it though it makes me feel like if I don't watch this show and circle back in another 5 years I'll still discover more new details.
I might be reaching but something about Mance Rayder's styling feels a bit native American to me. And I can't help but wonder on a meticulous show like this if that's on purpose. If you think about the wildlings as the indigenous people in the north and how they essentially been pushed out of their own lands I wonder if they were trying to make a subtle point there.

Dany locking up the dragons made me so sad. They didn't even do anything! Why do they have to suffer for their brother?
Arya & the Hound - such a complex relationship but one of my favorites on the show. So exciting to see her get on that ship!
I know you've passed this point and I can't remember if it gets explained again later but: "Valar Morghulis" is a High Valyrian phrase meaning "all men must die," and is traditionally answered with "Valar Dohaeris," meaning "all men must serve".
The whole ending sequence with Tyrion, Shae Tywin. The whole thing was nuts. I still stand by I don't think she was playing him the whole time but it doesn't make the betrayal any more forgivable.

That moment with Jaime and Tyrion is one of my favorites. You don't see a lot of brotherly affection in general and that kiss on the cheek was very... groundbreaking? Idk how to explain it but I feel like men are so scared of being seen as too soft or too girly and so they don't show a lot of physical affection (in GOT and irl), so that was very sweet to see for once

Stannis showing up north of the wall was so badass; I remember being just as confused as you my first watch through
Tywin is such a hypocrite bro, he married his first cousin. That whole family is just ugh 🤢
The dragons names are:
Drogon (black in color, named after Drogo)
Rhaegal (green/bronze in color, named after her eldest brother Rhaegar)
Viserion (cream/gold in color, named after her second eldest brother Viserys, the one who weds her to drogo)
This is the issue with dragons. In the end they are beasts with their own mind. As loyal as they are to Dany, they have their own free will as well. You can’t tame them 100%. The only reason Danys dragon have been able to grow as big as they currently are is because they have not been chained or restricted. If you remember in earlier episodes (I forgot what season) but they say that the last known living dragons were no bigger than dogs and this is because they were chained and caged in the fighting pits in kings landing.

A common greeting or statement, but particularly in the context of the Faceless Men of Braavos. & Yes, showing the special iron coin to a Braavosi obligates them to obey and respond with "Valar Dohaeris".
