Sho's mother was teaching all this proper behavior in the context of running a traditional inn. I don't know, maybe Sho's family also expected a path that Kyoko didn't necessarily want to do, she was only trying to fit into Sho's family.

She only acknowledged Kyoko when she was perfect but in this episode the flashback shown where they are wearing kimonos was Sho's mother. Just like you discussed, her relationship with her mother lead her to believe that she has to be perfect for Sho and his family or they will abandon her.
