I mean, to be fair it's something that I experiment with and make decisions on all the time with every single image. It's in them all the way from how the framing is set up, what models to use, haze, atomospheric effects. It's something I can make explicit maybe in a future alt angles post.

On the literary side, it makes sense to me (which details are emphasized, the kinds of figurative language used, etc.) I’d be interested to see how different lenses/aspect ratios/levels of render detail and such affect the same POV shot of, say, the viewer towering over a cityscape. Lots that can be experimented with!

The short answer is no, not necessarily. It's not just from a 3D visual artist's perspective but taking the lead from photography and film. How you position the camera and what lens you use implies certain things about the pov of the viewer and therefore how the scene is viewed. In film this can vary from shot to shot but there is usually an overidding perspective. It's the same in literature tbh.

Maybe this is a stupid question, as I’ve never had to think of this from a 3D visual artist’s perspective, but wouldn’t a giant/growth POV necessarily do both?

It's something I've been meaning to do more of. It's interesting what pov bigs prefer: one that makes them look big, or one that makes everything else look small. (sure it varies and most content is made to do the former)
