I'm surprised Paul doesn't have any hot pot restaurants in Seattle area. I've been to few fairly authentic hot pot and Din Sum restaurants in the east bay of California ( I have some friends from Hong Kong who have introduced me to some great Chinese cuisine in the states) It's an dining experience like no other regardless if your in China or the US coast (you wont get hot pot in Mississippi Kirk boys!), and if you have a Ranch 99 market Asian grocery store or equivalent near you, a portable table burner and big pot, you can have hot pot at home.
