Quinoa salad, Roast veg & Chicken thighs

Quinoa salad (great made from left overs as already cold but easy enough to make from scratch too. I make this while the raasted stuff is cooking.

Ingredients (just add together and toss):

Cooked Quinoa 2 cups ish when cooked.

One finely chopped shallot or small onion

1 tin of drained black beans.

1/3 cup of live yoghurt

Generous splodge of olive oil

Handful of chopped fresh mint

Salt & pepper


Chicken thighs:

7-8 chicken thighs:

Put in baking tray and massage in the following then arrange skin side up:

2 heaped tsp Paprika

Half a lemon juiced

Generous splodges of olive oil

1/4 tsp salt

1/4 tsp Cayenne pepper

1/2 tsp black pepper

1tsp dried garlic


Cook at Gas Mark 7-8 or 220 C for an hour or so.

Halfway through cooking time drain most of the  juices and use to dress the veg. Stir then put veg into oven as well. At this point I put veg at the top and thighs on the middle shelf.

I used the following,  but you can obviously change this up for what you have / like.:

One pack baby  plum tomatoes

One and half onions chopped into chunks

2 Peppers in chunks

One pack chestnut mushrooms in quarters and chunks
