250g Lentilles Vertes (Dry green speckled lentils) The best lentils for flavour and texture IMO. Tons of fibre, protein & loads of what you need for a healthy gut. Cover well with water and gently simmer for 45 mins or so until soft but still holding their shape. Add water as needed so it doesn't boil dry, but not so much that you end up with a watery soup. The final texture is quite dense as you can see in the vid.
One large onion- finely chopped & gently fried. Do this while the lentils simmer and then add to the lentils once they're cooked.
Option 1: 1 heaped Tbs Marmite - serve with grated cheddar cheese on top. It's really that easy and doesn't need anything else.
Option 2: About an inch of fresh grated ginger root & 2 cloves of garlic fried til gently golden and added near the end of cooking time with 1/4 tsp salt to taste.
More options: Add sliced Carrots &/or French beans 15 mins before the end of cooking time for even more vitality. Add a tin of brine tuna for extra protein if you need it.
