I wouldn't say she is evil lol. She just does things her way. She doesn't do evil acts for the sake of being evil like Sakuna. She is a mercenary like Toji, but even Toji didn't kill unless he was getting paid or had a good reason to. It is more of showing that not all sorcerers are good people, which we should already know.

Also yh that scene is just what it is, An eye opener to who mei mei is, evil, twisted, horrible. Bluring the lines of evil between curses and sorcerer.
