Here are mine. Although I don't listen to these bands as much as I used to, I still feel comfortable being stuck with them:
Metallica
Dream Theater
Coheed & Cambria
These bands cover an extremely wide array of styles, emotions, and lyrical subject matters to where I could cycle through each of their discographies and never be missing something I might be in the mood for. And, sure - nostalgia plays a huge role here too. They are my "comfort" bands.
Each band also has records that I'm not super fond of, and records I've hardly spent time with. However, I think I could warm up to them on a desert island. Well, maybe not Metallica's Lulu.

Led Zep, there are days I neeeed "Fool in the Rain!" Type O, there are days I neeeed "All Hallow's Eve" (and "Can't Lose You" is my go-to sleep track for insomnia). I would love to choose Tori Amos as third, but realistically I'd have to choose Maynard (any MJK, any project) because there are too many songs of his that get stuck and must be exorcised.

Less Than Jake - Losing Streak, maybe a few cuts of Losers, Kings, and Things we Don't Understand (like 867-5309). 3. Primus - they're just SOOO good (even though I want to add another punk band to the mix, I'd only be fooling myself if I left them out).
