Happy Saturday, everyone!!

Today we're making my first-ever homemade scotch eggs! 

I decided to run a bit of an experiment with different sausage meat and types of egg-yolk - hope you enjoy the video!!

The best way to buy sausage meat is to buy your favourite sausages and just remove the skins. Most likely better quality (assuming you bought quality sausages) and pre-seasoned. BTW - no point me entering in a which sausage is best debate. I’m from Lincoln(shire)!

It's not just you! Everyone seems to have that problem with the App but the Desktop version is OK. I've submitted a ticket to Patreon but I'm sure they're getting flooded with complaints lol

Not sure what happened with the latest Patreon app update on Android, but the video on the post is not visible on either my phone or tablet after the update. Earlier posts with videos do show their videos though. 🤷‍♂️

My Mom used to buy a brand of golden breadcrumbs called "Crisp-it" here in the UK, but it seems they don't make them any more! However, you CAN get Paxo Golden Breadcrumbs from Waitrose - though you OUGHT to be able to get Paxo products from other supermarkets as well...? Have a look on Google!

Yeah! They were so easy and really tasty - although I didn't like them when they were cold, the breadcrumb layer went soggy 😩 so you gotta eat them fast!

That looked really good! I haven't had scotch eggs in years. I think I might try making some using Jimmy Dean breakfast sausage - that should give them a nice little kick. 8^)

I can't think of a reason why not as it seals the shell and prevents air from getting in. just make sure the eggs are as fresh as possible, back of the shelf if stock rotation properly done. May not stay fresh for quite as long. The way to test an egg before cooking is to place in a jug/mug of cold water if it sinks it's ok, if it floats it's off. Floating one end up but not completely floating just touching the bottom use immediately.

Panko was ideal since you were baking instead of deep frying. The cheaper sausage probably had more fat. Fat is less dense than muscle. That is likely why the shell cracked open too. The meat shrunk as is cooks which is normal but the fat melted away also. May have been the juiciness. I also like my Amazon silicone mats. Don’t use cooking spray on them. And if you want the bottom of what you’re cooking browner or crisper don’t use the mat for those things. I want a Scotch Egg now.

I should to try the buttery egg trick. Need to verify though. Does that work with North American style eggs that have the cuticle removed or strictly with fresh/European style eggs.

Great job, they look really tasty, especially the Lincolnshire ones. Surprisingly easy. Cool you got that cookbook, Renee is great, a fellow Ontario girl I believe. Was debating buying the cookbook myself.

Wow that was well done and I am so glad you like the cookbook. Not going to lie, when you said you were going to make something British I didn't expect Scotch eggs. Does the book say which version of Shake'N'Bake to use, I'm guessing because it's sausage it would be the pork one?

The boiling time for a soft boiled egg depends on its size, 3 minutes for a small egg, 4-5 for a medium and 6-7 for large and very/extra large need 7+.

The cheaper the sausage meat, the more water and other cheap ingredients hence being heavier. Buy a minimum 80% pork sausage (meat) preferably from a quality butcher. Deep fry them if possible as the meat only needs cooking not the egg which occurs when in the oven for 30 minutes, try a 200 deg. oven for 15 minutes. Practice makes perfect. A dog (which you don't have) will get rid of any failures! Luxury Scotch Eggs can be made with Wild Boar or Venison. I once had some made with Pheasant meat and Quail eggs, the eggs were still soft, The Pheasant very well hung, very gamey, a very good Chef who wanted to use up some Pheasants that if kept a day longer would have been off. I know how the Quail eggs were kept fresh for so long, just coat any fresh egg in melted butter (preferably salted) and they will keep for months and have a buttery flavour.

I really didn't realise how much I was salivating during that - I love scotch eggs and I'll definitely be making some myself now as I need something savoury as a change from the scones I've been trying out last week. Pretty sure the panko crumbs, softer eggs and well-seasoned meat will take it up a level from what I'm used to buying as well.
